Methods to make an image grayscale in Adobe Illustrator
By Using Grayscale:
This is the quickest and most simple way to convert an image into grayscale.
Step 1: Select your desired image, If you want to choose multiple images or objects press Ctrl + A from the keyboard.
Step 2: Go to the main menu bar, select “Edit” from the dropdown list, select “Edit Colors” and then select “Convert to Grayscale”.

By Using Saturate Option:
This is also the easy method, that you can choose to convert image into grayscale as you wish, You can also increase or decrease Intensity to make your image according to your choice.
Step 1: Select your image.
Step 2: Go to the main menu bar, select “Edit” from the dropdown list, select “Edit Colors” and then select “Saturate”.
Step 3: Saturated panel will appear.
Step 4: Adjust the Intensity slide to the left to convert the image to grayscale. (If you want some colors in your image you can also adjust the slide according to your choice).

Step 4: Select Color Mode to “Grayscale”.
